Our Murray Goulburn tasty cheese is already cubed (this takes care of the health issue) and 'tumbled' (there are few crumbs). After much feedback, we have got our cube size to that preferred by customers; "a just-right bite size".Unlike other brands, our cubes do not stick together.

By consistently using only one brand of cheese, we are confident of you always having the same taste and flavour all year round.

The maturity of the cheese is between 9 and 12 months. This gives it that extra ‘bite' when compared to milder cheeses.

Customers place a few cubes of cheese, along with some biscuits, into their bowl and can enjoy this ‘mini' meal. It is particularly popular in gaming rooms, golf and bowls clubs.

Better still, as our cheese is packed in 1kg bags, it is ideally sized for our average customers' usage for one day.

Under the present health regulations, some clubs and hotels are unsure as to whether they are allowed to put cheese out for their customers.

It is important to remember that different foods have different regulations as to how long, and under what conditions, they can be put out. It is for this specific reason that each food type must be viewed separately.

So, are clubs allowed to take cube cheese from a fridge or cool room and put it on the counters in health dispensers? Yes! There are two clear regulations:

 

 
  • Cheese can be out of a refrigerator for a maximum of four hours. If it has not been eaten by then (highly unlikely in a club or hotel environment), it must be discarded.
  • Cheese can be returned to the refrigerator if it has been out for 2 hours or less. After two hours it cannot be put back into the fridge.
     
 

Many establishments now send their staff to health and safety training courses and unfortunately they often came away believing that cheese falls into the same category as meat and poultry with regards to certain refrigeration requirements.

Most often staff are not being told that there are specific conditions under which cheese can be put out safely.

The notion that the cheese must be kept under ‘fridge like' conditions while on the counter is plainly incorrect. Nobody wants to eat cheese when it's cold and hard. Cheese is meant to be eaten, and enjoyed, at room temperature.
